Consultation

The Vesuvio Wood Fired Ovens team guide you in selecting the right oven for your needs and budget. The showroom, located in Sydney, has a number of wood fired ovens on display and if required, they are available to visit your premises and discuss your needs in further detail. For interstate clients, there are a number of dealers who can assist you.  



Supplying

Vesuvio Wood Fired Ovens supply the largest range of commercial wood fired ovens in Australia. They have four models available, each with various sizes. In total there are 23 professional ovens for you to choose from and they have ovens arriving regularly so stock levels are high.

Installing

Installation of the modular wood fired ovens (GR Series) is easy and the perfect choice when access is limited. A builder can generally assemble the oven within a day however, if installation is required, Vesuvio can organise an experienced installer.  The Igloo, Verace and OT models come pre-assembled and can be wheeled into place.

Gas Option

There is the option of purchasing a gas kit with your oven. If you do so, it is essential you have a licensed gas fitter connect the gas and AGA approval must be obtained. These costs are not included in the cost of the oven. 

Accessories
 
The company also specialises in pizza making tools and accessories. They stock an extensive range of Italian made G.I. Metal tools and accessories, offering high quality and reliability at reasonable process.

Planning and Installing Your Commercial Wood Fired Oven

What should you consider when looking at putting a wood fired oven in your restaurant kitchen? Vesuvio Wood Fired Ovens has a few tips for you...

1. How much space do you have allocated for your oven in the kitchen plan?
When designing your kitchen, consider how much space you have for your wood fired pizza oven and the work space you require.  For example, how close is the preparation area to the pizza oven?  Does the chef have enough space to manoeuvre?

2. What is your expected capacity per night at the busiest time?
Estimating the amount of pizza’s to be sold each night is the best way to determine which sized oven is best for your needs.  Our wood fired ovens have a capacity from 4 to 18 pizza’s.

3. What fuel source would you like to be using?
All Vesuvio Wood Fired Ovens can be used with wood only, gas only or a wood/gas combination.

4. How would you like the Flue positioned?
Unless the oven is outdoors, a ventilation specialist should be consulted to determine the best position and ventilation for the flue.

 5. What access to the site is available?
Vesuvio Wood Fired Ovens are available in modular or pre-assembled form.  If site access is restricted, our GR Series ovens are the perfect choice.

6. What are your local goverment regulations?
Ensure you consult your local government regarding any special regulations in your area.  We can provide assistance if required.

Planning & Installing Your Residential Wood Fire Oven

Have you ever wondered what you need to consider when planning to buy and install a wood fire oven in your home. Vesuvio Wood Fire Ovens has some advice to help you. 

Planning

1. Consider the area available for the oven. 

Vesuvio Wood Fired Ovens are available in three sizes, offering an oven perfect for almost any space.
FVR 80 –  1200mm x 1200mm minimum base size.
FVR & TOP 100 – 1400mm x 1400mm minimum base size.
FVR & TOP 120 – 1600mm x 1600mm minimum base size.

2. Consider any additional work space you need. 

You may wish to consider having some space around or near the oven where you can prepare and rest the food. 

3. Consider what type of finish you would like.

Vesuvio Wood Fired Ovens can be finished in a number of ways for offering great versatility in how the oven is finished. They can be rendered, enclosed, bricked in, painted or tiled.  For inspiration, go to our photo gallery to see how other ovens have been completed.

4. Consider where the flue will be

If your oven is under roofing, you may need to extend the flue so that it goes through the roof, or divert the flue around the structure.  Remember, Vesuvio Wood Fired Ovens are perfect for both outdoor and indoor use.

Installation
Vesuvio Wood Fired Ovens are supplied in modular form, ready to be constructed on site.
Construction is straight forward, and complete, easy to follow instructions are provided.
You can choose to:
  1. Assemble the oven yourself or employ your own builder.
  2. Have one of our qualified installers build the oven on your already constructed base
  3. Have our qualified installation team build your base and oven for you.
  4. We can assemble the oven for you on a stand at our factory and deliver it to you complete.

The History of Wood Fired Ovens

Wood fired ovens have been used in many civilizations around the world, particularly in Europe, throughout history. The best known use of the ovens would be in Pompeii, during ancient Roman civilisation. IN the preserved ancient ruins of Pompeii, more than 30 wood fired ovens have been discovered and show a remarkable level of engineering and many similarities to the way of life from ancient days to today.

Some of these wood fired ovens date back 3,000 years and are still in remarkable condition. They are a superlative example of the wonderful craftsmanship of the ancient Romans. The ovens that have been discovered are primarily constructed from an assortment of bricks and ceramic materials. Beautifully built, even these ancient wood fired ovens were well shaped, insulated and vented.

Throughout Europe it appears these ovens were used for different purposes. Large, oversized ovens have been found which were most likely built and owned by wealthy land owners who probably ‘rented’ out the oven to the local villagers. Wood fired ovens found in ancient Roman civilisations were however used for both commercial and residential purposes. These smaller ovens were most likely used to only feed one or two families at a time. The larger ovens were used for commercial purposes and have been discovered throughout ancient Italy in places people gathered to eat. These early restaurants, especially in Pompeii, have been wonderfully preserved due to the force and unexpectedness of the volcanic eruption, to reveal a surprisingly modern commercial centre with what looks like modern day pizzerias – with some even having granite bench tops.
